Tim's Sweet Potato Soup

We had an impromptu get together last month with Katy and Tim, and he brought over this lovely soup. Tim is our favorite realtor – ever! I spent a bazillion hours with him, this past summer, to find the perfect home. Those of you ‘in the know’ would speculate that I spent a bazillion hours with anyone without asking telling them to go fly a kite, but Tim is truly set apart from the rest of us mere mortals.
To start with he has a huge disarming smile, is impeccably dressed and is quite handsome. To top it off – he kept his opinions to himself, was always engaged, and was game for any adventure! It also didn’t hurt that he toodled me around in his fancy convertible.

Tim is an exceptional cook, but he doesn’t use any recipes – good for him – bad for me. I was able to cobble this together through multiple text messages. It’s a close second to his original.

Sweet Potato Soup

In a large soup pot or Dutch oven saute:
6 oz Smoked Bacon diced
Once the fat has been rendered add and sauté:
1 Cup Diced Onion
1 Cup Diced Celery
1 Cup Diced Carrots
4 Cloves Garlic minced
2 Red Peppers Diced
Once onions are translucent add and stir to coat the spices:
4 Bay Leaves
2 Chipotle Peppers Diced
1 Guajillo Pepper seeded, rehydrated and minced
2 tsp Smoked Paprika
2 tsp Ancho Chili Powder

Add:
4 Large Sweet Potatoes peeled and cubed
6-8 Cups Chicken Broth
Start with the lesser amount of broth, you can always add more depending on how brothy you like it. Simmer soup until potatoes are very soft. Using a wire whisk stir until some of the potatoes are mush, but leaving enough to bite into – don’t over whisk – you don’t want mashed potatoes!
