Heavenly Potato

Todays  guest chef, Derek, is one of those people with true charisma. You know the type, where everyone is drawn to their magnetism, and it makes you kind of jealous that no one is giving you that kind of attention. But no one is ever envious of  Derek, because he has a shiny, impenetrable aura of joy, peace and strength, that he shares abundantly with the rest of us through his contagious smile and kind ways.

I had the pleasure of working with Derek in a facility that serves over 4000 guests a day. There were several times when shit hit the fan and panic started to run amuck.  I learned that working with Derek, and his zen-like ways, in this chaos, that not only would everything be alright, but everything would be done right and on time to boot. Those of you who know me, know I can get more than a little worked up, and  I surely do miss having that calming influence on a daily basis.

Derek is a self proclaimed “Potato Man”, and this is his favorite baked potato recipe. Enjoy!

Heavenly Baked Potato

Large Baking Potato peeled
Cut potato like you are going to slice it, but don’t cut all the way through.  Keep going down the whole length of the potato.  Slice the potatoes into slices (about 1/4″ thick) without going all the way through. A good tip is to place old wooden spoons on each side of the potato when slicing to keep the knife from going all the way down to the cutting board.
Place in oven at 350 with an equal amount of Olive Oil and Butter
Throw in a few peeled whole Garlic Cloves
Bake and BASTE with butter mixture until cooked through
Top with your choice of Three Cheeses I use Asiago, Mozzarella and Colby
Top with Bacon and Sour Cream
Salt & Pepper to taste
