Brazilian Black Bean Chili

I found this recipe in the Joy of Cooking several years ago, altered it slightly, and have enjoyed it every winter since.  Hope you do too!

Brazilian Black Bean Chili
In large soup pot with a little Oil sauté 3-4min.:
2 Cups Diced Onion
2-4 Cups Sliced Kielbasa (may substitute diced chicken)
2/3 Cup Diced Red Pepper
1 Tbsp Garlic
Add and stir:
5 Cups of water
1 heaping Tbsp Beef Base may substitute beef broth for water
5 Cups Black Beans
1 Cup Orange Juice
½ Cup Sherry
1 Tbsp Cumin
¼ tsp Red Pepper
1 tsp Cardamom
¼ Cup Wondra
Simmer uncovered until it has reached your desired thickness.

    I don’t think I’ve ever had sherry in my chili – looks delicious!!
