Chicken Cacciatore

Not your regular Cacciatore. This is a comfort dish made easy and lower in fat using skinless chicken breast tenders.  Rich with lots of vegetables and best when served over creamy polenta.

Chicken Cacciatore
In large non-stick skillet over med-high heat sauté 3-4 min:
½ Cup Raw Chopped Bacon
1 Cup Diced Onion
1 Tbsp Minced Garlic
Add brown on all sides:
2 pounds Chicken Tenders
Add deglaze until almost evaporated:
½ Cup Red Wine
1 Tbsp Balsamic Vinegar
2 Cups Chicken Stock
3 Cups Mushrooms
2 Cups Diced Tomatoes
½ Cup Roasted Red Peppers
½ Cup Kalamata Olives (optional)
2-3 Tbsp Wondra Flour
¼ tsp Red Pepper
2 tsp Dried Basil
Stir well and simmer for 15 minutes or until chicken is 165° and sauce is slightly thickened.:

Serve over Pasta or Polenta.
