Raspberry Chipotle Pork Tenderloin

This is sweet and spicy! Totally addicting and a huge crowd pleaser. Baked, broiled or grilled this one comes out a winner every time.

Raspberry Chipotle Pork Tenderloin
Preheat oven to 400°F.
2 Pounds Pork Tenderloin

Moisten the loins with some water then coat with a mixture of
1 tsp Kosher Salt
1 tsp Paprika
½ tsp Chipotle Spice
½ tsp Cumin
½ Tsp Coriander

Place tenderloins in a 9×13 inch baking pan and cook for 25 minutes. Remove pan from oven and pour sauce (recipe at bottom) over the pork. Return to oven and cook 10-15 minutes or until internal temperature reaches 145°F.
Let rest for 5-7 minutes. Slice pork approx. 1/4″ inch thick.
Serve pork slices with raspberry sauce spooned on top or on the side.

Mix to combine
1/3 Cup Crushed Tomatoes
1/3 Cup BBQ Sauce
1/3 Cup Raspberry Preserves
1 Tbsp White Vinegar
1 Tbsp Chipotles in Adobo

    OMG, this looks amazeballs! I wish my husband liked meat with heat, because I’d be all over this. I may make the sauce for me and my SIL for our lunches next week. Thanks for sharing Mary!!
