Caramel Apple Cookies
1/2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp SaltCombine and beat on medium high-speed until light and fluffy:1 cup Butter
1/2 cup Sugar
3/4 Cup Spiced Apple Cider Instant Drink Mix (not the sugar-free)
1 Tbsp VanillaAdd, and beat in one at a time:
2 eggs
Add the Flour mixture and mix on low until just blended.
Unwrap before stuffing the cookies:
36 Caramels
Line cookie sheets with a silpat liner.
Spoon out dough, about one tablespoon at a time, press in a caramel, making sure there is ample cookie dough at the base of the cookie. Failure to do this will result in your caramel oozing out of the bottom and your cookie sticking to your liner. If it peeks out of the top, that’s okay!
Place cookies 2″ apart
Bake 12 to 14 minutes at 350° until golden brown around the edges. While the cookies are still slightly warm remove, and cool the rest of the way upside down.
