Sean gave me the pesto idea. The BBQ Bible gave me the stuffing idea and the rest is SPECTACULAR DELICIOUS history.
Butterflied tenderloin and spread on FRESH pesto
Stuffed Sharp Provolone, Chicago Bacon Slabs & 1 Green Onion
Rolled and tied and placed over INDIRECT heat. It looked like an ugly green monster!
Cover and let cook 1 to 1.5 hours
Let the flame KISS it just before removing from grill
Let it sit 10 minutes before slicing
