Zucchini Carpaccio

I remember when we were new at gardening.   We planted too much of everything, especially zucchini.  Who knew how prolific those little vines would become!  Undaunted, we researched old zucchini recipes and created nifty new ones.  We had some form of zucchini with every meal.

Fred’s nephew, Dave, spent that summer with us helping Fred build the house. After about a month of the zucchini routine he quietly said that zucchini ice cream might be nice. God bless him! Not a complaint, not a whimper. Just a suggestion. Dave had had enough zucchini. I think we all had!

Zucchini Ice Cream, anyone??

Zucchini Carpaccio

Using a mandolin or a steady hand shave/slice

1 Yellow Squash
1 Green Zucchini

Shingle them in one or two layers on a large platter.
Microwave for 45 seconds, rest for a minute and microwave again for another 45 seconds. You do not want to actually cook the squash, but rather soften it.

Place platter in fridge to cool until you need it again.
Chop fine and set aside.
Handful of Fresh Mint
Handful of Fresh Dill or other Fresh Herb
Shave on mandolin or other way:
Parmesan Cheese – may also use Goat or Feta Cheese
Dressing:
Juice of 1 Lemon
whisk while pouring in slowly:

2-4 Tbsp Olive Oil
Add 1 Tbsp minced Garlic
Take platter out of the fridge and sprinkle with half of the
Herbs and drizzle with half of the dressing. Also add:

Kosher Salt
Fresh Pepper

If you did your zucchini in two layers, place another plate/platter on top and ‘flip’ over – repeat herb/dressing/seasoning then top with Shaved Parmesan.

    I love zucchini! Out of all the summery veggies, I like zucchini the most because it is so versatile. That being said, I’m sure you guys were up to your ears in the stuff, so I can see how you would’ve wanted a little break. But still, when you are in the mood for zucchini, zucchini carpaccio sounds like a delicious idea. 😀

    I just commented on Patty’s Facebook page about the thoughts of you all making zucchini ice cream. But I haven’t found that recipe here yet. Did you ever try to make it? What great memories! Patty O’Brien

      No, we never did try that ice cream, but it sure makes a fun story.
