Chorizo Pizza

May 15, 2011

This pizza has turned into one of our favorites.  It’s morphed a little since I took this picture, but the components have stayed the same...

Chorizo Pizza
makes one 14″ Pie

In a small food processor combine:
1 1/2 Cups Corn – frozen, fresh or canned works equally well
1/4 Cup Cream or Whole Milk
Kosher Salt & Pepper to taste

Spread sauce on rolled out dough
we use this one
Top with:
2 Cups Pepper Jack Cheese
1 lb Fresh Chorizo, broken up
Bake, cool then serve to top with

Mango Salsa
Lime Wedges
Chopped Cilantro

Baking instructions:  Bake in an oven that’s been pre-heated to 425°-450° for at least a half hour.

Use a Pizza Stone that’s also been in that hot oven for the same half hour.

Bake for 20-25 minutes or until golden around the edges and sufficiently melted in the middle

This looks like a great twist on pizza. I was planning a sausage pizza this week (Sam’s favorite) and this gives a little variety. Thanks.
