Irish Cake Bomb
Guinness Cake
Preheat oven to 350°.
Grease and flour three 9″ round pans.
In a saucepan bring to a simmer over medium heat:
1 1/2 Cups Guinness Stout
1 1/2 Cups Butter
Once melted, whisk in until smooth, remove from heat:
1 rounded Cup Dutch Process Cocoa
In a separate bowl, stir to combine:
3 Cups Flour
3 Cups Sugar
2 tsp Baking Soda
1 tsp Salt
In yet another bowl, with an electric mixer, beat together, at least 5 minutes, until thick and lemon colored:
3 Eggs
Add in and beat until well combined:
1 Cup Sour Cream
While beaters are running, slowly pour in:
Guinness mixture
beat just to combine.
Turning the mixer to low add until just combined:
Flour mixture
Divide batter equally among the pans and bake for about 30-35 minutes, or until cakes test done.

For the flavoring I reduced a 1/2-3/4 Cup of Bailey’s down to a little less than a 1/4 cup of liquid. It worked great.
