Smoked Salmon Pizza

Every year for Christmas, Kevin and Rose send their prized salmon, smoked. During fishing season in Alaska, they go to the Copper River to net Copper River Reds. Their adventures to, from and while there, are worthy of a book ….a chapter each year. First, they have to drive eight hours just to get to there. Then, they make camp, frequently in daunting weather…..a tent the first few years, until they got their big Ford F250 with “Turtle,” the camper, on the back. They have nets with LONG handles and BIG hoops. They tie themselves to rocky crags and lean far out to get their nets in the the murky roiling water as it comes crashing by. When they feel a THUD they haul in the net with a salmon in it. Heavy work. Only one nets at a time while the other holds on. They do this for hours until they reach their limit…….30 salmon. Then it’s back to camp to gut and clean the fish, pack them in ice and race for home……another eight hour drive. Once home, they clean, filet and freezer-wrap their catch. Whew!
What an annual adventure. I think of them every time we have our lovely Smoked Salmon!

Smoked Salmon Pizza
A Baked Pizza Crust we use this one
Once crust is cooled spread over the top:
1/2 Cup Soft Cream Cheese
Then top with:
1/4 Cup Capers
Smoked Salmon torn in pieces
Handful Fresh Chopped Dill
Handful Fresh Chopped Chives
Slice and enjoy!
Once my husband gets his appetite back, this will be one of the first things I’ll make for him – he loves smoked salmon!
Never thought to just bake and cool a pizza crust before – love it! 😀

Oh wow – no fair! I so miss Copper River salmon. 😦 You’re so lucky to get it and have put it to great use!
