Clean Nacho Bowl

Who am I kidding?  Clean Nachos.  Did I just make that up?  Yes!  I did.  Why make them clean?  We love nachos just as much, if not more, than the next person but they are deadly when it comes to trying to eat healthfully.  We never order them anymore when we’re out, but lately we just got to craving them and when I saw the El Milagro brand chips front and center at the A&G grocery, I caved!



I thought if I coupled these thick, crunchy corn chips with a nice salad we could get our nacho fix.  And since it’s been such a long time since we last had REAL nachos, maybe we wouldn’t notice too much.   AND for a weeknight dinner, I figured what a TREAT it would be.

Guess what?  I was right.  It was perfect for a quick fix without any guilt.  The salad is great all alone too, but why would you want to do that?



Clean Nacho Bowl


In large bowl combine:

3 Cups Cooked, Cooled, Quinoa

2 Cups Corn

2 Cups Black Beans

2 Cups Diced Tomatoes

1 Cup Green Onions

2 Avocados Diced

1 Tbsp Dried Oregano

1 Tbsp Cumin

Set Aside.

In another bowl whisk to combine:

1 tbsp Minced Garlic

1/2  Cup Orange Juice

2 Tbsp Honey

1/4 Cup Lime Juice

Pepper Flakes

1 tsp Kosher Salt


Once whisked, pour over salad mixture and stir just to combine.  Layer in a large bowl:



Chopped Lettuce


Top with salad mixture and sprinkle with:

Fresh Chopped Cilantro

    And it’s vegan too! If it weren’t for the chips it would also be gluten-free! (I bet celiacs can find gf chips, though.) How very, very cool. This is def on my “to make” list. Great job–it looks wonderful.

      Veronica, you’re always so kind. It never occured to me they might be vegan, and I believe the corn chips don’t have any gluten…I’m pretty sure they’re made with just corn, water and salt. Woo Hoo!

        LOL! Aren’t I such the fool! I can’t believe I didn’t realize that–duh! So it is g/f! Yay! I’m obviously not celiac or I’d realize that. hehe

    It’s a gorgeous dish. We don’t eat the tortillas much so any form is a treat. I don’t keep any of that stuff around the house because if I do I end up eating the whole bag. 😦 Your salad looks fantastic.

    Yum! I could go for a bowl of those right now and it’s only 10 am! And no…I am NOT pregnant..LOL
