Calypso Island Burger

The treat about spending more time in the back yard bbqing is that John & I get to see more of the CUTE kids next door.  There are two families (the mothers are sisters) living in a duplex, and there are six kids, ages 4 to 15, who have been a lot of fun to watch grow up these past several years.  I think the biggest plus is that they are extremely well mannered and seem to actually enjoy a little chit chat from the crazy curly-haired lady (that’s me).


The island salsa on this burger is as unique as it is delicious. Truly, it makes the burger SING!  To match that wondrous flavor you really need an awesome side.  I cube up some papaya and top it with a lot of grated lime zest and a good dousing of lime juice.  Simple, quick and, indeed, SPECTACULAR!

Calypso Burgers


adapted from Build a Better Burger



Island Salsa:

Heat some olive oil in a pan  and saute until softened:

1/2 Cup Onion finely diced

2 tsp Garlic minced

1/2 Red & Yellow Bell Pepper finely diced

2 Jalapeno Peppers finely diced


Add and cook until almost all liquid has dissolved:

2 Tbsp Molasses

3 Tbsp Dark Rum

1 tsp Lime Zest


Remove from heat and stir in:

1/2 Cup Tomatoes finely diced

1 Tbsp Angostura Bitters

Kosher Salt to Taste




1 Pound Ground Pork

1 Pound Hot Pork Sausage

Kosher Salt & Pepper to taste

1/2 tsp Cloves

1 tsp Curry Powder

1 Tbsp Lime Juice

Make into 4-6 equal patties.

Grill over medium-high heat until cooked all the way through.

    ‘packs a punch’ is just too few words – but I’m speechless, that’s one heck of a salsa not to mention a burger with a kick on its own

    another wonderful burger….you amaze me your the queen of burgers, if you ever opened up a business for the amercian burger this would be the dream of all burgers palaces!

    I love a good burger. I have one of the Build a Better Burger books. I love them. They are full of inspiration.

    Wow! These are strong bold flavors! Never would have thought of adding in bitters to a burger recipe!
