Almond Biscotti

Happy New Year! This last weekend my mom and I made biscotti and I wanted to squeeze in one last holiday treat on Foodo. We just moved to an island off of Seattle we all love it a lot. Since we just moved I don’t know many people so this Christmas break we have been cooking up a storm. We have been wrapping gifts and having fun with each other in our new house and kitchen. Our neighbors are nice and we love the land around us so I hope you like the recipe!
Almond Biscotti
1/4 c finely chopped almonds
1/2c sugar
2 T butter
4 egg whites, lightly beaten
2 tsp almond extract
2 Cups Flour
2 tsp baking powder
1/4 tsp salt
Preheat oven to 375 F. Place almonds in small baking pan. Bake 7 to 8 minutes or until golden brown,k watching carefully. Set aside.
Beat sugar and butter in medium bowl with electric mixer until smooth. Add egg whites and almond extract, mix well. Combine flour, baking powder and salt in large bowl. Stir egg white mixture and almonds into flour mixture until well blended.
Spray two 9×5 inch loaf pans with cooking spray. Evenly divide dough between prepared pans. With wet fingertips, spread dough evenly over bottoms of pans.
Bake 15 min or until knife inserted in centers comes out clean. Remove from oven and turn out onto cutting board. As soon as loaves are cool enough to handle, cut each into 16 (1/2-1 inch thick) slices. Place slices on baking sheets covered with parchment paper or sprayed with cooking spray. Bake 5 minutes, turn over and bake 5 more minutes or until golden brown.
Serve warm or cool completely and store in airtight container.
I love chocolate so I melted some chocolate chips and place in a zip-lock baggie cut off the corner and drizzled chocolate over the biscotti….
I got this recipe from Treasury of Christmas cookbook…I see why it is one of my mom’s favorite books for holiday recipes. My family loved these so I will definitely be making them again….

My 2010 resolution is to attempt to bake more. I love love love biscotti and Chef Emma has turned out a wonderful display! I am inspired and will have to try this. Wishing you a blessed, wonderful new year.
