Fresh Cranberry Salsa

Oh so light and oh so refreshing! And only four ingredients. Slap this one next to the traditional jellied goo that comes from the can – because you don’t want to disturb anyones traditional holiday feasting – and see what transpires. I guarantee it will become a NEW tradition for the adventurous folks at the table.
This one came from John’s brother (Lewis) and sister-in-law (Mary). Thank you Lewis & Mary it’s my favorite!
Fresh Cranberry Salsa
3 Cups Fresh Cranberries – 1 pound bag
3 Cups Large Diced Oranges (peel and all!)
1/2 Cup Sugar
2 tsp Dried Mint OR a handful of Fresh!
Put everything into the food processor and pulse until you get your desired consistency. Add more sugar if you like it sweeter.

What a refreshing change to the red jelly goo that sits on the table. Still in the shape of the can and sliced.
Oh, but it’s so great on sandwiches the next day – and so easy to slice when it’s in the shape of that lovely can.
