Succotash

We went to the Cheesecake Factory for dinner for my birthday and Emma ordered the meatloaf with the Succotash….we all tasted it and loved it and decided we needed to try it at home.  I found a few recipes on line and changed them up a bit and came up with this.  It was delicious! 

 

Succotash

     1 1/2 cups fresh corn kernels-about 3 ears, or frozen corn thawed

     1/2 cup chopped onion

     1 cup chopped summer squash

     1 cup chopped red bell pepper

     1 tsp. ground cumin

     1 tbsp. olive oil

     2 garlic cloves, minced

     1/2 cup defatted chicken broth

     1/8 tsp. hot sauce

     1/8 tsp. ground pepper

Place a large nonstick skillet over high heat until hot. Add corn, red pepper, onion, and cumin; saute 5 minutes until vegetables are slightly blackened. Add summer squash, olive oil, and garlic; sauting an additional minute. Reduce heat to medium-high, add broth and remaining ingredients. Cook 3-5 minutes or until heated through, stirring frequently.

    I totally grew up eating this when we ran out of ideas for all the summer squash we grew.

    Very nice and summery!! I just thought we might have a different sort of corn over here, as 5 minutes is hardly enough to cook it :-/ it’s usually too hard :-/

    This was fantastic and went well with the Cuban Flank Steak I made. The only changes I made were more hot pepper sauce and cumin to taste and substituted butter for the oil. Definitely a keeper! I am going to try and make it in the crock pot after browning for a large party we are having. Thanks! 🙂
