Day 5 ~ Katy ~
Is it already Day 5 of this Salsa/Salad extravaganza!? My how time flies. Here’s were you saw this Mango-Orange Salsa originally. It goes together with those stacks the same way peas go together with carrots – they were meant for eachother!
2 mangoes, peeled, pitted and diced
1/2 avocado, peeled, pitted and diced
1/4 pineapple, peeled, cored and diced
3 Tablespoons finely diced whole green onions
3 Tablespoons chopped cilantro
1 orange, peeled and diced
1/2 red bell pepper, diced
1.5 Tablespoons freshly squeezed lime juice
1.5 teaspoons grated fresh ginger
1/4 teaspoon red pepper flakes
Combine all of the ingredients and chill for 2 to 3 hours. Bring to room temperature before serving. This salsa was so good that I’ll be making it as a side for other dishes, as well.
