Dulce de Leche Bars

Yes – this was a part of our PIG FEST weekend with Niki & Mickey! Just a couple days before they arrived John & I were at the Guanajaudo market and saw a can of Dulce de Leche so we thought let’s try it! John LOVES sweetened condensed milk and will eat manjar blanco right out of the half shell in just about one sitting. Once we opened the can and tried it’s contents WE WERE GONERS!
We started fighting over the can for the next bite and it was all gone way too soon. Over the next couple days I was thinking up ways to use such a delicacy – and all that came to mind was to serve it straight up – why try to make a great thing better?
However – as the days passed – I NEEDED to find a way to get some more in my hands pie hole. So when Mickey said we were invited to a Cuban BBQ for 150 people I asked begged if I could make a dessert. Of course who’s going to turn down dessert!? So I put my thinking cap on and came up with these little sinful treats and made 190 of them – less the dozen or so we ate before we even got to the party – oops.
Dulce de Leche Bars
Preheat oven to 350°
Grease a 9×13 pan WELL
Spread cookie dough in bottom of pan about 1/3″ deep
Heat 1 Can Dulce de Leche in microwave safe bowl just until spreadable – warm NOT HOT! Spread it over the top – leave a small space from the edge of the pan
Sprinkle with 1 Cup Heath Bar Topping
Sprinkle with 1 Cup Crumb Topping
Bake for about 30-45 minutes. I baked mine in large sheet pans and they took almost an hour. Just be sure the center is not jiggling and the top is a light golden brown.
Cookie Dough I used
Blend together
1 Cup Brown Sugar
1/2 Cup White Sugar
3/4 Cup Butter softened
Now add and beat well
2 Eggs
2 tsp Vanilla
Mix together these dry ingredients Then add to main bowl and blend just until combined. Do NOT over mix
2 1/4 Cups Flour
1/2 tsp Baking Soda
1/4 tsp Salt
Lastly add and mix in
1 Cup White Chocolate Chips – optional!
Crumb Topping:
Take 1/4 to 1/2 Cup cookie dough and mix together with 1/2 to 3/4 Cup oatmeal with your hands until it becomes a crumbly consistency.
I mixed this crumb topping with the Heath Bar topping and sprinkled it on all at once.

Oooh. Sounds wonderful! I have a recipe for brownies w/ dulce de leche that I still haven’t tried. Maybe I’ll buy me some and make this instead!
