Thai Tilapia

It’s time to attone for all our sinful eating pleasures over the weekend with a LOT of fish. It’s always fun toodling around with Mickey & Niki – one problem – Niki’s never been to Chicago. We HAD to share all the food delights the city is know for. Let’s see, we had Kuma’s, Gino’s, a Chicago Dog or two, Blackies and homemade cheesecake (post to come soon) to name just a few of this past weekends delights – Now we must pay the price with some healthy eating and some good fitnessin’!
This is a great Thai recipe. I found it on Closet Cooking and it has crept into our rotation frequently. It says to bake, but I’ve found it cooks up quick in a saute pan. If you have the ingredients it really goes together quickly – serve it with jasmine rice that’s been cooked with chicken broth.
Thai Tilapia
Marinade for an hour or just throw it all in a skillet and simmer until the fish is flaky:
2-3 Tilapia Fillets
Handful Chopped Cilantro
1/4 Cup Tamerind Juice
2 Tbsp Minced Garlic
2 Tbsp Sugar
1/2 tsp Shrimp Paste
3 Tbsp Fish Sauce
Sliced Ginger about thumb sized
1/2 tsp Crushed Red Pepper
Serve with more chopped cilantro and a slice of lime.
