Prime Rib on the Grill

Yeah, so I didn’t eat meat for 3-months (for the most part) while Wanda and the kids were in Roatan (everything in the chest freezer was in family size x2.) This was all made up for in one day with this Prime Rib,this sandwich and this Dutch Baby pancake!
Sorry there’s no photo of the final results. We finished it at some friends and didn’t bring the camera. 😦 Will have to do another one I guess.
Prime Rib on the Grill
7-9 lb Prime rib2-3 Cloves Garlic cut into 6-8 slivers each
Rub2 tsp onion salt
2 tsp garlic salt
2 tsp smoked salt
2 tsp rosemary
1 tsp pepper
Trim prime rib – cut fat from ‘bone end’ and cut out meat/fat between bones.
Pierce holes 1″ apart and insert garlic slivers. Cover with rub
Grill on medium +/- times depending on heat of grill, monitor internal temp, will increase 10 degrees after removing from heat.
2hrs for RARE -125 degree internal temp,
2-2.5 hrs for MEDIUM – 145 degree internal temp and
2 1/2 – 3 hrs for WELL DONE – 160 degrees.
Cover with foil and let rest 15 mins before carving and serving.
