Sun Dried Tomato Butter

Even though I have only tried this with the Siciliano Burger I think it would be equally tasty on top of some hot pasta. Creamy, sweet and savory, I must confess I have eaten a coin straight up and was in heaven. It’s great to make a big batch, keep a roll in the freezer and be able to have it handy for the whole grilling season – it does last for more than six months if wrapped well.

Beat in mixer
1# Butter
1 Cup Chopped and re-hydrated Sun-dried tomatoes
3 Tbsp Honey
3 Tbsp Capers
½ Cup Fresh Chopped Parsley
Salt
Pepper
Or on top of some fish . . .yum
This is a very unique butter recipe – I liked how you added it to your burgers in the other post.
