Bourbon Peach Pie

Another peach recipe! We paired this delicious number with a dinner of Smoke House Ribs, Baked Beans,vinegar based slaw and a wonderful craft beer: Stone Ruination IPA, on tap, no less! A true delight for any summer night!

10-12 Fresh Peaches
1/4 Cup Butter
1/2 Cup packed Brown Sugar
1 1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/2 Cup Cream
1/4 Cup Corn Starch
1/3 Cup Knob Creek® Bourbon
Double recipe of Perfect Pie Crust
Milk for brushing
Sugar
Peel, pit and slice peaches. Preheat oven to 350 degrees.
Melt butter in a wide skillet. Add sliced peaches, brown sugar, cinnamon, nutmeg, and cream. Bring to a boil, stirring by lifting mixture carefully with a spatula. Boil 5 minutes. Add Knob Creek Bourbon and return to a boil for 20 minutes, until peach mixture is thick and tacky.
Fill deep dish pie crust with peach mixture, cover with other crust and crimp the edges. Brush with milk and sprinkle with sugar. Bake 45 – 60 minutes.
