Honey Gremolata Chops

This is the kind of week night summer meal that’s right up my alley: FAST & EASY! It’s summer here in the blogosphere and pretty much everyone disappears, so without a lot of chit-chat I’ll get on with it..
So simple, so tasty! Thanks to Francis Mallmen and his new cookbook Seven Fires.

Honey Gremolata
.
Whisk together in a bowl:
1 Cup Fresh Italian Parsley (flat leaf) chopped
1/2 Cup Fresh Oregano chopped
1 Tbsp Garlic minced
1 Tsp Lemon Zest
1 Tbsp Lemon Juice
1 Tbsp Honey
1/2 Cup Olive Oil
Kosher Salt to taste
Fresh Ground Pepper to taste
Can store in fridge for a week.

Mix together then press firmly into both sides of 4-6 pork chops:
1/4 Cup Garlic minced
1/4 Cup Fresh Rosemary chopped
Kosher Salt and Pepper to taste
2-4 Tbsp Olive Oil
You can also combine everything in a small food processor.
Grill chops 4-7 minutes on each side – depending on thickness of cut.
