Chipotle Chowder

Simple, versatile and delicious.
Cauliflower Soup Grilled Gazspacho
New Mexico Red Chile Posole Corn Chowder
Wild Rice and Mushroom Soup with Chicken
Chipotle Chowder
makes 1 1/2 qts
Saute in heavy saucepan over medium heat:
4-6 diced Bacon Strips
Once lightly browned add:
1 Cup diced Onion or Leeks
1/2 Cup diced Celery
1 Tbsp minced Garlic
Stir in and let brown up 1-2 minutes:
2 Tbsp Flour
Deglaze with:
1/4 Cup Sherry
Stir in:
3 Cups Chicken Broth
2 Cups Frozen or canned Corn
2 Cups Diced Red Potatoes
2 Cups Milk – your choice Whole or 2%
1/4 Cup Canned, Diced Chipotles in Adobo Sauce
Let simmer on low for 20-30 minutes then add:
1 Pound medium, peeled and deveined Shrimp
Optional to add 1/2 Cup Heavy Cream or Half & Half
Let simmer another 5-10 minutes until shrimp are cooked.
Man, does that look good. And warm. Warm is good.
This looks wonderful…anything with shrimp and bacon I’m all over it. We’ll have to try it this weekend….
