 ~ Emma ~

This week I have been making omelets for my mom and dad and of course I make one for me because they are SO good!!!  The first time I made it, I made it for my mom in bed and I didn’t put pam on the pan and it was like scrambled eggs with tomato, sprouts, and cheese. So what I am saying is USE PAM and everything will work good!!!  So hear is my recipe…

Summer FUN Omelet

2 eggs

1 pinch salt

1 pinch pepper

A few drops hot sauce

1 diced tomato

handful alfalfa sprouts

a handful of shredded Swiss cheese

Heat a nonstick pan over med heat when it is hot enough to make some drops of water sizzle it is hot enough to cook your eggs.

Crack eggs into a mixing bowl add salt, pepper and hot sauce and beat with fork.

Pour eggs into the pan so they cover the bottom of the pan.  Let them cook undisturbed until the eggs get solid.

After the edges are solid scatter the tomato, sprouts and cheese over one half of the egg.

When the eggs are no longer runny, carefully slip a spatula under the half without the fixings with one quick flip fold the egg in half

Turn off the stove and slide omelet onto plate and dig in!!

Wow! I never thought about putting sprouts in my omelet. The egg looks perfectly cooked. Such a great skill to have.

I love omlettes, especially if someone else serves me one in bed with a cup of tea!Figtreeapps
