Indonesian Salad

A lovely Indonesian salad called Rujak that mixes fruit and vegetables. Steven Raichlin recommends grilling some of the fruit on kabobs.

Rujak Salad
Here are the basic fruits and veggies:
1 Whole Cucumber Sliced
2 handfuls Bean Sprouts
1 Sliced Mango
1/2 a Jicima Sliced
1 Starfruit or Asian Pear Cubed
1/2 Fresh Pineapple Cubed
1/2 Cup Cilantro Chopped
Skewer the pineapple and pears and grill a couple of minutes on each side.
For the dressing: it makes enough for two recipes and holds well in the fridge in an air-tight container.
3 Tbsp Dry Roasted Peanuts - put in a Cuisinart and pulse until finely ground
Add:
3/4 Cup Tamerind Juice or 3 Tbsp Balsamic Vinegar and 3/4 Cups Water
2 inch piece of ripe Banana
2 Cloves Garlic
1/4 Cup Diced Onion
1 to 3 Jalapenos or Hot Chili Pepper
2 Tbsp Fish Sauce or Soy Sauce
2 Tbsp Molasses
1-2 Tbsp Brown Sugar
1 Tbsp Lime Juice to taste
Salt to taste
Pulse into a finely pureed dressing.
Pour over salad mixture as your taste likes.
That is one good looking salad!
