Summer Stuffed Tomato

Here’s my Summer Stuffed Tomato. I ate the whole thing!!! It was delicious!!! I’ve been making the tuna part of this recipe for two years. Dad helped me with cutting the tomato. The lettuce from our garden always tastes so much better than the stuff we buy. It’s got a little fresh Lemon Thyme from the garden too. We’ve got a bunch of stuff growing in the garden - spinach, zuchini, tomatoes – it’s just not ready yet like the lettuce is.
Summer Stuffed Tomato
1 can tuna drained
2 Tbl mayo
2 tsp pickle relish
Leaf Lettuce
Mix tuna, mayo and relish
Core tomato and slice so it opens out
place on bed of leaf lettuce
Spoon tuna into tomato
Garnished with Lemon Thyme

Nice work, Emma. Do you use dill relish or sweet dill relish?
