Tomatillo Salsa

Wow was this good. Cool, refreshing and easy to throw together. The recipe came from Bobby Flay’s Mesa cookbook. It’s going to be one of our summer staples.
Tomatillo Salsa
Optional to put half the tomatillos and onions in a blender. It will give it a different consistancy like this photo, but it won’t affect the flavor if you don’t and you’ll save time and cleaning if you don’t.
10 Tomatillos – diced
1 Small Red Onion – diced
Minced Garlic
1 Tbsp Honey
Spicy Pepper – fresh or dry
Kosher Salt
1/4 Cup Cilantro – chopped
1/4 Cup Lime Juice - fresh or bottled
2 Tbsp olive Oil
Combine and serve
Salsa verde is one of my favorites and I really like the sounds of a fresh tomatillo salsa!
I’m going to make this tonight to serve over grilled fish. It looks just wonderful, and we’re kinda tired of “red” salsa. BTW, what font do you use for your Foodo del Mundo logo? It’s perfect!!!

we made this the other day for some carne asada tacos..it’s crisps and refreshing! We’ve made tomatillo sauce before, but cooking it first. fresh is really nice. Try our Peruvian potato salad with your fajitas!
