Butter Beans

Did you know Butter Beans are also known as Lima Beans? I always thought lima beans were smaller and green. I’ve made this recipe a couple times now and really like them.

Problem is they give me GAS! The great thing is you can use Navy Beans and they can be canned. I just call them Butter Beans cuz it’s fun to say and the name fits the size of the monstrous beans in the picture. So you don’t have to go through the process of soaking and boiling. They’re equally delicious both ways. I first discovered this recipe over at TNS. She got the recipe from a Jamie Oliver cookbook.

Butter Beans
Quantities are estimates.
Saute` in Olive Oil :
2 Stalks Leeks chopped like the photo above
5 Cloves Garlic sliced or chopped
1 Tbsp Tarragon or Thyme
Add:
1 Cup White Wine
Simmer a couple minutes then add:
1-2# White Beans
Simmer until hot.
Stir in:
½ – 1 Cup Sour Cream
1 Cup Chopped Parsley – a Must!

They look delicious!
I read somewhere that you can reduce the amount of gas caused by beans by soaking them. The longer they soak, the less gas they produce. I tried it last time I made U.S. Sentate Navy Bean Soup (Joy of Cooking recipe), and lo and behold hardly any gas! I think I left them soaking for two days…..from morning the first day, overnight through afternoon of the next day.
You just need to change the water a couple times.
I only soaked them for one day – I’ll remember next time to go for two days. I’m working on some Lupini beans right now – directions are for FIVE days in salt water! I’ll post them when the results are in. ~ Mary
beautiful… hey next time you fry up some pork chops, leave a teaspoon of the fat and let it get hot. Add chopped leaks and stir until tender and then turn up the heat. When almost smoking, throw in the drained big fat butter beans and cook until hot. salt pepper and garlic… yummmm!
